How It Works

Safe thawing keeps food out of the "danger zone" (40-140 F) where bacteria multiply rapidly. The refrigerator method is safest but slowest. Cold water is faster but requires attention. Microwave is fastest but must be followed by immediate cooking.

The Formula

Refrigerator: 24 hours per 5 pounds. Cold water: 30 minutes per pound (change water every 30 minutes). Microwave: 6-8 minutes per pound on defrost setting.

Variables

Weight (pounds), thawing method, time (hours or days).

Example

A 15-pound frozen turkey in the refrigerator: 15 / 5 = 3 sets of 24 hours = 3 days. Start thawing on Tuesday for a Friday dinner.

Tips

  • Never thaw food on the counter at room temperature -- the outside enters the danger zone while the inside is still frozen.
  • Planning ahead makes the refrigerator method easy -- it just takes space and time.
  • For cold water thawing, make sure the food is in a leak-proof bag to prevent water absorption and contamination.
  • After thawing in the refrigerator, you have 1-2 extra days before you must cook it.
  • You can cook many foods directly from frozen -- it just takes about 50% longer than thawed.
