How It Works
Scaling a recipe is simple multiplication: multiply every ingredient by (desired servings / original servings). This calculator handles the math and shows results in practical cooking fractions.
The Formula
Scaled Amount = Original Amount x (Desired Servings / Original Servings)
Variables
- Scaling Factor — Desired servings divided by original servings
- Original Amount — Amount listed in the original recipe
- Scaled Amount — New amount after applying the scaling factor
Example
A recipe for 4 needs 2 cups of flour. Scaling to 6 servings: factor = 6/4 = 1.5, so you need 2 x 1.5 = 3 cups of flour.
Tips
- Spices and salt do not always scale linearly. When doubling, start with 1.5x spices and taste.
- Baking powder and baking soda should be scaled exactly -- they are chemical reactions.
- Eggs are hard to split. For half an egg, whisk it and measure half by volume.
- Cooking times do not scale linearly. A doubled casserole might need only 25% more time.
- When scaling down, keep oven temperature the same but check for doneness earlier.
