How It Works

Doubling a recipe is more than just multiplying by two. Baked goods need time and pan adjustments, and strong flavors like spices and salt may need to be scaled back slightly.

The Formula

Doubled Amount = Original Amount x 2

Variables

  • Amount x 2 — Double all ingredients proportionally
  • Bake time x 1.25 — Add about 25% more time for baked goods
  • Spices x 1.5 — Start at 1.5x for strong spices, taste and adjust

Example

1/3 cup doubled = 2/3 cup. 3 eggs doubled = 6 eggs. 1 tsp salt doubled = 2 tsp (but taste first).

Tips

  • Do not double the baking pan size -- instead, use two pans at original size for more even baking.
  • Yeast recipes that are doubled may need less than double the yeast. Start with 1.5x.
  • Soups and stews double perfectly. Baked goods are trickier.
  • If doubling a casserole, increase bake time by 25% and check the center with a toothpick.
  • Doubled cookie dough should be chilled longer for easier handling.
