How It Works
Oven temperatures vary by country. The US uses Fahrenheit, most of the world uses Celsius, and British recipes often use Gas Marks. Knowing how to convert lets you follow any recipe from any cookbook.
The Formula
Celsius = (Fahrenheit - 32) x 5/9. Gas Mark = (Fahrenheit - 250) / 25.

F = degrees Fahrenheit, C = degrees Celsius, GM = Gas Mark number.
Example
350 F = 177 C = Gas Mark 4 (Moderate Heat). This is the most common baking temperature for cakes and cookies.
Tips
- Always preheat your oven for at least 15 minutes before baking.
- Oven thermometers are inexpensive and help verify your oven runs at the correct temperature.
- Most home ovens are off by 10-25 degrees -- an oven thermometer is a worthwhile investment.
- Fan-assisted or convection ovens typically run 25 F (15 C) hotter, so reduce the temperature accordingly.
- Gas Mark 1 starts at 275 F (135 C). Each whole number adds 25 F.
