How It Works

Deep frying cooks food quickly at high temperatures, creating a crispy exterior while keeping the inside moist. The key is maintaining the correct oil temperature -- too low makes food greasy, too high burns the outside before the inside cooks.

The Formula

No single formula, but the general rule is: most foods fry between 350-375 F. Larger or denser foods use lower temperatures for longer times.

Oil temperature (F), cooking time (minutes), oil amount (cups or quarts).

Example

For crispy french fries: heat oil to 375 F, fry for 3-5 minutes until golden. For extra crispiness, fry once at 325 F, cool, then fry again at 375 F.

Tips

  • Use a deep-fry or candy thermometer to monitor oil temperature throughout cooking.
  • Fill the pot no more than halfway with oil to prevent dangerous overflow when food is added.
  • Use a neutral oil with a high smoke point: peanut oil (450 F), canola oil (400 F), or vegetable oil (400 F).
  • Let oil return to target temperature between batches -- adding food drops the temperature.
  • Never leave hot oil unattended. Keep a lid nearby to smother any flare-ups -- never use water on a grease fire.
