How It Works
Butter measurements vary widely between American recipes (sticks, cups, tablespoons) and international recipes (grams, ounces). One standard US stick of butter equals 1/2 cup, 8 tablespoons, 4 ounces, or 113 grams.
The Formula
1 stick = 1/2 cup = 8 tablespoons = 113 grams = 4 ounces = 1/4 pound.
Variables
Sticks, cups, tablespoons (tbsp), grams (g), ounces (oz), pounds (lb).
Example
A recipe calls for 150 grams of butter. That is about 1.33 sticks, or 10.6 tablespoons, or 2/3 cup. Use 1 stick plus about 2.5 extra tablespoons.
Tips
- US butter sticks have tablespoon markings on the wrapper -- use them for easy measuring.
- European butter has higher fat content (82% vs 80%) -- results may be slightly richer.
- For accurate baking, weigh butter on a kitchen scale in grams rather than using volume measurements.
- Cold butter, room temperature butter, and melted butter behave very differently in recipes -- follow the recipe instructions.
- Salted butter contains about 1/4 teaspoon of salt per stick -- adjust salt in recipe accordingly.
